Crunchy Oatmeal Raisin Cookies

Lately I have had an obsession with cookies. I get up early in the morning and make a batch of cookies. Cookies, cookies, cookies. I eat some, my husband eats some but mostly I give them away. I got up this morning and saw the frost covering the grass, I guess we have to get use to that again and  wanted to make something that would fill the house with a sweet and spicy smell. So I made my Crunchy Oatmeal Raisin Cookies.  My husband likes oatmeal cookies so I have been trying out a few different variations. This is the recipe he likes the best. I hope you like them too.

You will need the following ingredients:

  • 1 1/2 cups of all purpose flour
  • 1 1/2 cups Old Fashioned Quaker Oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup raisins
  • 3/4 cup unsalted butter (1 1/2 sticks)
  • 1/2 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 1/2 teaspoon vanilla

Mix together all dry ingredients, flour, oats, baking powder, salt and cinnamon, set that aside.

In large mixing bowl beat butter with a hand mixer until it is light and fluffy, add in brown sugar and granulated sugar and continue mixing for three additional minutes. Continue mixing while adding the egg and the vanilla until well combined.

Now by hand with spoon mix in all dry ingredients. Mix in raisins.

Take a spoonful of cookie dough in your hand and form a small ball, flatten ball with the palm of your hand. This should make about 24 cookies.

Bake at 375 degrees for about 18 minutes until golden brown. If you overcook these the raisins will dry out and become hard.
