Sweet Pineapple Preserves

I love pineapples. I buy them all the time. If you come over to my home you will see a pineapple on top of my fridge, just sitting there waiting to be eaten. Usually I just cut them up and eat them. I decided to try and make a jelly or fruit preserve from pineapple and see how it tastes. I have preserved other fruits but had not yet tried a pineapple.

Why did it take me soooo long to decide to do this. Sweet Pineapple Preserves are absolutely delish. I love Sweet Pineapple Preserves. And this is so easy it make.

I used just one pineapple and got two pints of preserves. If you’re a pineapple lover you should try this recipe.

You will need the following ingredients:

  • 1 fresh pineapple
  • 1 6 oz can of pineapple juice
  • 1 cup sugar
  • the juice of 1/2 of a lime

Start by removing the skin of the pineapple including any brown spots (eyes). Quarter the pineapple and remove the center core, discard core. Chop the pineapple into small chunks.

Put 6 oz of pineapple juice in a sauce pan, add pineapple chunks and bring to boil. Simmer for about one hour on medium heat. Stirring occasionally.

After about one hour add 1 cup of sugar and the lime juice, stir until sugar dissolves. Continue cooking until mixture has thickened to desired consistency, about 1 1/2 hours. If you prefer a smoother Sweet Pineapple Preserve transfer your mixture to a food processor and use the pulse setting. I put about half of my mixture in the food processor and pulsed the fruit a few times. I prefer a chunky Sweet Pineapple Preserve.

Once you are happy with the consistency of your preserve, spoon it into sterilized jars, add tops and bands. Once your preserve has cooled, store in the fridge. This will keep for at least one month.

I have spooned the Sweet Pineapple Preserve over cheese cake, it made a very nice dessert. I have also spread it over my morning toast, that was great with a cup of tea. What will you do with yours?
